A festive family tradition at our house, when the kids have been tucked in for the night, is making homemade egg nog and sitting down to watch National Lampoon's Christmas Vacation.
Secretly Lisa hates Chevy Chase (shhh), but she loves Chef Jered's Egg Nog so she makes the sacrifice.
It's a common misconception that Egg Nog is hard to make, so you'll be pleasantly surprised when you set out to make this for your next Christmas party.
Ingredients
3 cups whole milk
2 teaspoon ground cinnamon
1 teaspoon ground nutmeg
2 teaspoon vanilla extract
8 large egg yolks
3/4 cup sugar
1 and 1/2 cup of heavy cream
Instructions:
Step One - separate the egg yolks:
Separate egg yolks.
Step Two:
In a bowl combine the egg yolks and sugar.
Whisk together for about 3 minutes (colour will change to a pale yellow)
Set aside.
Step Three- heat liquids:
In a pot stir together whole milk, cinnamon, nutmeg and vanilla extract.
Slowly bring the liquid to a light boil.
Step Four (the most important step):
Ladle a 1/4 cup at a time of the heated liquid to the eggs and sugar mixture, whisking constantly. *We are doing this to keep the eggs from scrambling from the heat of the liquid, so take your time*
Add heated liquid until fully combined.
Step Five:
Return the mixture to the saucepan and cook over medium heat until slightly thick and the mixture coats the back of a spoon. Do not boil.
Step Six:
Remove from heat and stir in heavy cream.
Step Seven:
Put in the fridge for 2 hours before serving for it to chill.
If you're too impatient to wait that long, take your mixing bowl outside and place directly onto the snow and whisk as it cools (about 5 minutes).
Serve over ice in a festive mug, sprinkle with a pinch of nutmeg and enjoy responsibly!
Step Eight (Optional):
Add a couple ounces off Captain Morgan's Gingerbread Rum and cue up your favourite Christmas movie!
